Acrobat 5.0 no longer includes Capture (as in Acrobat 3) or the Paper Capture plug-in (as in Acrobat 4)

You can download a free Acrobat 5 capture plug-in here. This is for Windows only and has a 50 page per document limit.

Catalog is now built into Acrobat 5.
